You can usually remove wires for A/C, for communications with a dash or body control module, and sometimes for warning lights. You want to keep the wires for the sensors, the injectors, the fuel pump, and the distributor. The best way to do it is to get the GM wiring diagram that goes with that car / engine and start looking at what you know you won't be using.
