Is the a reason why every stock bin I have looked at is set to 1199.77rpm? Would I benefit from lowering this value to something more reasonable, like say 500?

without knowing what mask you're running,
that's probably used only during a cranking state, then when it's crossed and the 'engine is running' it's ignored until it reaches an 'engine dead' state (probably another RPM threshold)
they probably chose 1200RPM because that's a speed that the starter can't attain, so if you're cranking and hit 1200+rpm, the engine must have caught.
there's probably another threshold for 'engine stopped'.
so unless you change to some faster-spinning starter that falsely reaches an 'engine started' condition i'd leave it alone. exiting a cranking state prematurely probably loses your cranking spark and fuel calculations pretty quickly, so you might find you have an engine that is harder to start.
