So I have some definition files here which are not XDF's. I do not use TP but plenty of people do. Is there a piece of software available that can convert from another common definition file format to XDF format?

What is the file type?
Tuner Pro will convert from ECU into XDF.
What are the definitions files for? Robert Saar has made a lot of XDF files and he may have already made some for the defs you have.

Are they readable in Edit Pad or Note Pad? If you have a $42 I'd like to see it.

These are not .ecu files and they are not readable in Notepad. I looked at them in a hex editor and realized the format of the files was probably set up by another piece of software, not a human.
